I encourage parents to learn more about Catholicism alongside their student(s). In addition to asking your student(s) about the materials and subjects covered in class, parents can read theologically rich books & articles (see links on the sidebar to some Catholic websites/papers/magazines) and view videos (especially on Youtube).
I personally found the below series of videos (from Word on Fire Catholic Apostolate; Youtube videos are here and here) to be very good in expanding my understanding of various Catholic ideas and concepts.
